3.3.05For the Increasing Number of Diners Interested in Healthful, Sustainable Food . . .A whacking in the arse for the shining star of the Princeton 'fast casual' 'restaurant' scene, Panera (it's the only one). Amanda Hesser considers the phenomenon (as she sees it) of Chipotle & concludes that maybe it won't be awful if the success of soul-less but relatively healthy, eco-nice compromise chains spells a 'seemingly bleak future' for traditional fast-food places. 'Fast casual' (this term makes no sense) is a market with growing room: 'Chipotle faces competition from Qdoba, a copycat chain that offers more choices, like poblano pesto burritos, but less discipline in its execution, and Panera Bread, which serves *fresh but mostly ill conceived sandwiches*.' Even though that barb was directed at my personal Starbucks, that's fair play, Amanda, fair play.
